Christmas BrunchSour Cream Coffeecake
1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
1 cup sour cream
1/2 cup Chopped nuts
1 teaspoon ground cinnamon
1/4 cup brown sugar
1 to 2 diced apples
In a mixing bowl, cream the sugar, butter and vanilla; beat on medium for 1-2 minutes. Add eggs, one at a time, beating well after each. Combine dry ingredients; add to batter alternately with sour cream. Mix well. Pour half the batter into a buttered tube pan. In a small bowl, combine nuts, cinnamon, brown sugar and apples. Sprinkle half of the mixture over batter. Cover with remaining batter. Top with remaining half of nut mixture. Bake at 350 °F for 45 minutes.
